Welcome to our first Menu Monday of the year! As I layed out yesterday, this week I am working off of a new blogging calendar that will hopefully help me plan a bit better and reach our family goals for the year.
What is a new year without a resolve to eat better. We are trying to focus on eating more whole foods - meat, vegetables, fruit, etc. and most importantly, more meals at home. We have a bad habit of eating out, especially for lunch and on the weekends.
In an effort to eat better and save a few bucks, I have put together a menu plan. The plan utilizes the ample amount of meat and food that is in our freezer and pantry paired with fresh ingredients that are on sale during any given week.
Here is our plan for this week...We head back to school and work on Tuesday so sack lunches those days.
Monday
Lunch - Salad w/grilled chicken
Dinner - Grilled Pork with Grilled Pineapple Salsa & green beans
Tuesday
Dinner - Taco Tuesday (ground beef)
Wednesday
Dinner - Vegetable & Chicken Lo Mein (Using this recipe as a base but will add A LOT more veggies)
Thursday
Dinner - Ham, Cheese & Apple Panini and carrots
Friday
Dinner - Chicken and Black Bean Stuffed Burritos
Saturday
Lunch - Hamburgers on the Grill, fresh fruit
Dinner - potluck/leftovers
Sunday
Brunch - Streussel Pizza (Papa Murphy's) & Fresh Fruit
Dinner - Orange Chicken with Snow Peas & Brown Rice
